The difference between cassava and tapioca flour: What you need to know
Cassava root flour is relatively new in the Czech Republic and therefore the different types are not often distinguished. There are two varieties on the market - cassava flour and tapioca flour. The main difference between them lies in the way they are processed. Tapioca flour is a starch that is extracted from the cassava root through a washing and crushing process. The pulp is then squeezed to produce starchy liquids, which form tapioca flour when the water evaporates. On the other hand, cassava flour is made from the whole root, which is peeled, dried and then ground to a fine consistency. This process means that cassava flour retains a greater amount of fibre, has a slightly beige colour and a coarser texture than tapioca flour.
