Peru
The coffee tree was introduced to Peru during the 18th century. The local coffee is very famous for its quality and good taste. Peru's coffee beans are mostly exported to Germany, Japan and the USA, which is a testament to their high standard. It is often used to prepare mixtures. The best coffee beans come from the Cajamarca, Amazonas and San Martin regions. Several species of Arabic coffee tree are grown here. A total of 98% of Peru's coffee bean production comes from forest areas from smallholders. Because of the conditions there, smaller farmers often cannot afford to buy fertiliser, so almost all coffee grown in Peru is marketed as organic. The biggest competition to the coffee tree is the cacao tree, which has a long tradition in Peru. But conditions for coffee growers are improving year on year.
Freshness is an absolute priority
Coffee is definitely not the kind of thing that would sit on a shelf for weeks and months waiting for someone to finally buy it and ship it. Arabica is imported to the Czech Republic from selected destinations green and in original jute bags, because they put a real emphasis on authenticity. They roast the coffee for as short a time as possible before shipping to ensure you're drinking fresh coffee.
How do you roast Arabica?
They always try to get the most out of green arabica because they know that their customers have refined tastes and want to indulge in quality coffee. For most of the imported arabicas, we have found medium roasting to suppress the acidity characteristic of lighter roasts and, on the contrary, to bring out the typical coffee aroma with hints of nuts, chocolate or caramel. At the same time, this roasting process preserves a certain smoothness and lightness of the coffee, so don't expect any earthy and dense notes that would distract from the gourmet experience.
