The process of growing oyster mushrooms
The mushroom is valued not only for its culinary properties, but also for its nutritional and bioactive content, including beta glucans. Oyster mushrooms are grown on cellulose-rich substrates such as wood chips or straw. The cultivation process is controlled to ensure the high quality and purity of the mushrooms. After harvesting, the oyster mushroom is dried at low temperatures to reduce the water content and preserve the bioactive components, facilitating the subsequent extraction of beta glucans. Heat breaks down beta glucans. The dried mushrooms are ground into a fine powder, which is then subjected to an extraction process. Usually, aqueous or ethanol extraction methods are used to isolate beta glucans from fungal cell walls. The extract is then filtered and concentrated to obtain pure beta glucan. Pure beta glucan is dried by spray drying or freeze drying, which provides a stable and easy to use powder.
