In this year's first spring harvest, you will find delicate teas with a wonderful aroma and a full, very pleasant taste that will be a refreshing addition to your table. The aroma is fresh and floral, slightly sweet or even mildly spicy. India, alongside China and Sri Lanka, is the largest tea producer in the world. The tea industry here employs about two million people, and the total annual production is between 800 and 900 thousand tonnes. The vast majority of teas from India are black. Green tea is produced in larger quantities in the northwest of the country and is intended mainly for the Afghan and Iranian markets. Higher quality green and partially oxidised teas are successfully grown in Darjeeling.
Ingredients
Indian black tea.
Preparation
Pour 250ml of hot water at approximately 100°C over 15–18g of tea. Leave to brew for 3–5 minutes, depending on the desired strength.
Storage
Store in a dry place at temperatures up to 25°C, away from direct sunlight. Protect from frost.
