Like the original Sencha, it is characterised by a harmonious aroma, an exceptional, refreshing, sweet taste with slightly bitter undertones and a high amino acid content. This classic among teas has retained all its qualities despite the process of caffeine removal, which is carried out using the high-pressure extraction methourThe tea is poured into a tank, which is closed and from which carbon dioxide is sucked out using a high-pressure pump. Only the caffeine is eliminated from the tea and leaves the tank with the carbon dioxide. Tea is great as a gift.

This tea of good quality and fresh taste is suitable for both casual and special occasions. It is grown on open plantations and everything from harvesting to processing the leaves is done by machine. It has an absolutely dominant position in the Japanese market, accounting for more than 80% of the total supply. It is grown on many plantations in Japan, but also in China - Chinese Sencha. There is also a form of Chinese Black Sencha. It is similar to the classic Sencha green tea, with the only difference being that the leaves are fermented as in black tea. Sencha is characterized by up to two centimetres long emerald green leaves in the shape of flat needles, with more or less breaks depending on the quality. The leaves have a fresh, slightly grassy scent. The pale greenish to yellow-green drink with a delicate floral aroma has a cool and sweet taste on the tongue. In the most exquisite varieties, it can taste like sweet almonds.
Removal of caffeine (tein) from tea
The removal of caffeine is done by high pressure extraction. This simple method takes advantage of the properties of very highly compressed carbon dioxide. The tea is put into a very stable tank and the tank is tightly closed. The carbon dioxide is then sucked out using a high-pressure pump. Due to the very high pressure, the carbon dioxide release reaction is so altered that only the caffeine is expelled from the tea, which leaves the tank with the carbon dioxide stream. In the next tank, the carbon dioxide is stripped of the caffeine and flows back into the pump to reunite with the caffeine from the tea under high pressure, closing the circuit. This method is gentle for the tea itself.

Preparation
To prepare 500 ml of infusion, use 3 to 4 teaspoons of good quality loose tea, then pour hot water at a temperature of between 75 and 85 °C. The optimum leaching time is 2 to 4 minutes. And because the tea is multi-filled, you can enjoy it several times in a row. The tea can be sipped hot or cold. If you add a few ice cubes, a teaspoon of honey, a few pieces of fresh or freeze-dried strawberries and garnish the whole glass with lemon, you have a great refreshing iced tea.
