Colombia
The first coffee trees arrived in Colombia in 1808, when a missionary brought them from the French Antilles (today's Lesser Antilles) via Venezuela. Cultivation began in the vicinity of Cúcuta and then spread further south. The most cultivated is the Arabian coffee tree, even in several varieties. The coffee-growing areas here are among the Andes, where the climate is slightly humid, which is good for the local coffee trees. It is also cultivated in the eastern, western and central mountain areas. The mountainous terrain here has different microclimates in different areas, so it is possible to pick coffee beans almost all year round, as the fruit ripens gradually in different places. But Colombia's coffee-growing advantages don't end there. Unlike Brazil, Colombia has also been fortunate in that its growers do not have to worry about sudden frosts destroying their crops. Coffee is so important to Colombia and its industry that every car that crosses the border must be carefully disinfected so that it does not accidentally carry a disease that affects coffee trees.
Freshness is an absolute priority
Coffee is definitely not the kind of thing that would sit on a shelf for weeks and months waiting for someone to finally buy it and ship it. Arabica is imported to the Czech Republic from selected destinations green and in original jute bags, because they put a real emphasis on authenticity. They roast the coffee for as short a time as possible before shipping to ensure you're drinking fresh coffee.
How do you roast Arabica?
They always try to get the most out of green arabica because they know that their customers have refined tastes and want to indulge in quality coffee. For most of the imported arabicas, we have found medium roasting to suppress the acidity characteristic of lighter roasts and, on the contrary, to bring out the typical coffee aroma with hints of nuts, chocolate or caramel. At the same time, this roasting process preserves a certain smoothness and lightness of the coffee, so don't expect any earthy and dense notes that would distract from the gourmet experience.
