Blade Material: Special French Steel with 0.50% C, 14.50% Cr, 0.70% Mo, 0.12% V. Grip: Split, made of special plastic with high temperature resistance. The design of the handle ensures removal of all unhygienic gaps between the metal and plastic handle components. Processing: The blade is forged from one piece then hardened and tempered to achieve a very fine structure. With careful honing, long blade life is guaranteed. Hardness min. 52 HRc.
