I bought the preserving pot so that I wouldn’t have to keep an eye on the temperature. Unfortunately, with this pot, it’s a necessary evil. Keep adding or removing heat to get the temperature just right. You have to check it with an external thermometer… I could have just bought a pot with a thermometer for a few hundred and made preserves on the hob or in the oven, as I’ve always done. I'm returning the goods. Big disappointment.

Furthermore, the final measured value is influenced by the number and arrangement of the glasses, the quantity and temperature of their contents, and the accumulation of heat inside the pot.
