taste of the "brine" very good - not overcooked with either fish sauce or chilli flakes, but spicy enough
in addition to the classic acid. I really like cabbage and kimchi (the vegetable one, without meat and I use it as a side dish of course) and as good as cabbage is, so is kimchi - was it all cabbage or also kale etc.?!
