Folks, steer clear of this line of knives from KDS, which lists HRC lower than 54. These are the Optmium, Eko, Trend and Trend Roayal knives. A decent one might be one of the butcher knife range.
The steel on them is a disaster, and any knife as expensive from manufacturers (I won't name names) that are here on Alza too and are more popular, have much better steel than what KDS Sedlčany has been putting out there for 30 years.
It is not possible to sharpen steel so that it shaves even a little, in any way, not even on the skin.
