I use exclusively NUC (formerly Intel, now Asus) in my business practice - small, doesn't hang, performance sufficient,

A fine microcomputer for your own server. Beautifully pulls Nextcloud, Immich, Jellyfin, Actual Budget, Homarr, Homepage, Home Assistant, etc.
Quiet
Foldable
It has enough inputs and outputs
Thunderbolt
Wifi
Bluetooth
M2 NVMe drive slot
Two RAM slots
The second disk slot is only for short disks, which are hardly sold.
Only the higher version has the second disk expansion - unnecessarily expensive

Super performance
Compact
Great BIOS setup options
Enough cores for anything
in eco mode it is quiet and only raises the speed and clock when something demanding is required
2 NVMe slots (one PCI-e 3.0 2x and one PCI-e 4.0 4x)
Up to 128 GB Ram
I use the EMBY server and Intel's HW acceleration is just great
The price for buying RAM + the price of the PC is a steal
you can really hear it in performance mode

It's hard to evaluate a product when the OS failed to install. That's why I give it a neutral 3 stars. The board was arguing with the memory (according to the specification on Alza it runs even 6400MHz, realistically the 5600MHz memory was downgraded to 5200MHz, but still it could not communicate with it flawlessly). It also got stuck during the BIOS upgrade. So watch out and keep your nerve. Additionally, I chose the Core 3 100U model to be quiet, but it is quite audible under load. The noise of the more powerful Core Ultra 5 and 7 brethren must be unbearable.
Small
Theoretically decent performance
Very picky about memory
It can be noisy
