Mléko je zbavené laktózy. Postup je takový při odstranění laktózy. Většinou se používá neutrální laktáza z Sacharomyces (Kluyveromyces) marxianus var. lactis nebo z Bacillus circulans. Proces se ukončuje tepelným ošetřením, když se obsah laktózy sníží pod 0,1 g/100 g. Takto upravené mléko je sladší, vzhledem k vyšší sladivosti monosacharidů proti laktóze.
