If you want to roast steak, just turn the funnel to the volcano position, where all the heat is concentrated in the middle of the grid. In indirect grilling, the heat is distributed evenly and the funnel drains the dripping juices into a container hanging under the grill. Thanks to the temperature, it also ensures their partial evaporation, which gives the food itself and the surroundings the right aroma.
