In this year's first spring harvest, you'll find delicate teas with a wonderful aroma and a full, very pleasant flavour that will be a refreshing addition to your table. The aroma is freshly floral, slightly sweet or even mildly spicy. India, alongside China and Sri Lanka, is the largest tea producer in the world. The tea industry here employs around two million people, and the total annual production ranges from 800 to 900 thousand tonnes. The vast majority of teas from India are black. Green tea is produced in larger quantities in the northwest of the country and is mainly intended for the Afghan and Iranian markets. Higher quality green and partially oxidised teas are successfully grown in Darjeeling.
Ingredients
Indian black tea.
Preparation
Pour 250ml of hot water at approximately 100°C over 15–18g of tea. Leave to steep for 3–5 minutes, depending on the desired strength.
Storage
Store in a dry place at a temperature of up to 25°C, away from direct sunlight. Protect from frost.
