Recipe for Banana - buckwheat pancakes
Ingredients
On pancakes:
- 200 ml Alpro alternative white yogurt with coconut
- 100-150 ml Alpro coconut drink
- 250 g buckwheat flour
- 1 large ripe banana
- 1 teaspoon baking powder
- Pinch of salt
- 1 tablespoon coconut oil
For decoration:
- 12 tablespoons Alpro alternative white yogurt with coconut
- 8 tablespoons pomegranate seeds
- 4 tablespoons chia seeds
Method
- 1) Why wait for International Pancake Day when you can have it every day! Mix buckwheat flour, salt and baking powder. In the second bowl, mash the banana with Alpro alternative to white yogurt with coconut and Alpro coconut drink.
- 2) Mix the dry and wet ingredients to make a soft, lump-free dough. If it is too thick, add another drop of coconut drink.
- 3) Heat the coconut oil over a medium flame. Add three tablespoons of dough and fry for 3-4 minutes, turn and fry for another 2 minutewith. Continue until you have the dough.
- 4) Serve with Alpro an alternative to white yogurt with coconut, pomegranate and chia seedwith. Ideal as breakfast, dessert or snack. Vegetable pleasure whenever you want!
